It may be Christmas morning, but you and your family still have to eat. Citrus fruit salad with yogurt and granola is a light, easy breakfast that doesn’t leave you slaving in a hot kitchen. This dish is also good without the yogurt and granola for a simple fruit salad.

Be sure to remove the bitter white pith beneath the skin of the citrus fruit.

Citrus Breakfast Fruit Salad with Yogurt and Granola

Preparation time: 15 minutes

Yield: 6 servings

3 navel oranges

2 ruby red grapefruit

4 clementines

1 tablespoon lime juice

1 tablespoon honey

2/3 cup vanilla yogurt

1/3 cup granola

  1. Cut the peel and the white pith from the oranges and grapefruits. Working over a bowl to catch any juice, use a sharp paring knife to cut between the membranes and release the segments. Remove any seeds and cut the sections into quarters and place in a serving bowl. Simply separate the clementine sections and toss them in with the other citrus.

  2. Whisk together the lime juice and honey with the citrus juices from the bowl. Pour over the fruit and stir to combine. To this point, the recipe may be made the night before. Just cover with plastic wrap and refrigerate.

  3. Divide into 6 bowls and top with yogurt and granola. Serve immediately.
