This chicken provençal recipe uses the slow cooker. Unlike traditional chicken provençal, a slow cooker simmers slowly, so the food stays moist, eliminating the need for basting. Serve the chicken with French bread to soak up the wonderful juices.

Preparation time: 15 minutes

Cooking time: 6 to 7 hours on Low

Yield: 4 servings

4 medium potatoes

3 carrots

1 whole head fresh garlic

1 chicken (3 1/2 to 4 pounds)

2 medium onions

20 cherry tomatoes

20 white button mushrooms

1 cup pitted ripe olives, drained

Salt

Freshly ground black pepper

1 cup olive oil

1 tablespoon dried thyme

  1. Peel the potatoes and cut them into 1/2-inch-thick slices.

  3. Peel all the garlic cloves and thinly slice them.
