Almond Fudge Brownies

Prep time: 15 minutes

Cook time: 12 minutes

Yield: 12 brownies

Ingredients

1 cup almond butter

3/4 cup powdered erythritol

10 tablespoons unsweetened cocoa powder

3 large eggs

1 teaspoon vanilla extract

1/2 teaspoon baking powder

1/4 cup stevia-sweetened dark chocolate chips

Directions

  1. Preheat the oven to 325 degrees and grease a 9-x-9-inch baking dish with cooking spray.
  2. In a food processor, combine the almond butter and erythritol and blend until smooth.
  3. Add the cocoa powder, eggs, vanilla, and baking powder to the blender.
  4. Pulse several times and then blend until smooth.
  5. Spread the batter in the prepared pan and sprinkle with dark chocolate chips.
  6. Bake for 10 to 12 minutes, until set; then cool completely before slicing to serve.
