These pork ribs absorb the flavor of the tangy dry rub. They're absolutely scrumptious. Before broiling, however, you can baste the ribs with some of the barbecue sauce.

3-1/2 pounds lean pork spareribs
2 tablespoons paprika
1 tablespoon light brown sugar
1 teaspoon salt
1 teaspoon garlic powder
3/4 teaspoon onion powder
1/2 teaspoon dried thyme leaves
1/2 teaspoon cumin
1/2 teaspoon celery seeds (optional)
1/2 teaspoon cayenne, or to taste
1/2 teaspoon white or black pepper
Barbecue sauce
Cut the spareribs into serving size portions. Place the spareribs in a large flat glass, ceramic, or stainless steel pan.
In a small bowl, make a spice mix by combining the paprika, sugar, salt, garlic powder, onion powder, thyme, celery seeds, cayenne, and pepper.
Rub the spice mix on both sides of the ribs and place the ribs in a single layer on a broiler pan or roasting pan. Cover loosely and refrigerate for 2 hours or overnight.
Preheat the oven to 325 degrees F. Bake until the ribs are tender and nearly cooked through, about 1 hour. The ribs can be cooked ahead to this point.
Preheat the broiler. Broil, turning the ribs once until the ribs are lightly browned, about 10 to 15 minutes. Serve with barbecue sauce on the side.
