1-1/2 cups blanched almond flour
1/2 teaspoon baking soda
1 teaspoon ground cinnamon
Pinch of salt
1/2 cup unsweetened applesauce
1 teaspoon apple cider vinegar
1 room temperature egg
1 teaspoon vanilla extract
1 to 2 tablespoons raw honey
Preheat the oven to 350 degrees F and line a muffin tin with baking cups. Mix the almond flour, baking soda, cinnamon, and salt in a bowl.
In a separate bowl, whisk the applesauce, vinegar, egg, vanilla, and honey.
Spoon the batter into the prepared muffin tin, filling each cup to the top.
Bake until a toothpick inserted into the center comes out clean, approximately 20 minutes.
Allow the muffins to cool on a wire rack before serving.
